Loaded Baked Potato Soup

Yesterday was a perfect day to have a homemade soup--it was raining here. I found a recipe similar to this one on pinterest. I adapted to our tastes and this is what I came up with. Enjoy.

Ingredients:
6 medium potatoes-baked
1 onion diced
1 green pepper diced
fresh garlic-if you'd like
2 tbs butter
1/2cup flour
1 cup cheddar cheese
1.5 cup chicken broth
2 cups skim milk
4 slices bacon
salt & pepper to taste

How to:

Place potatoes in microwave poked and covered in damp paper towel--bake and let cool.
Fry bacon until crispy, set aside

Place butter in large pan, melt, add onions, peppers and garlic. Cook until soft.
Once cooked, add 1/4 cup flour and mix well-add broth. If its too thick add a little more broth.
Add milk-stir well. If too thick add a little more milk.

Peel skin off potatoes and dice/chop potatoes add to mixture.

Once completely mixed, seasoned add 1 cup cheddar cheese.

Serve with crumbled bacon on top and green onions.
