Easy Chocolate Chip Cookies

So I was catching up on some of the food blogs I follow and one made Vegan Chocolate Chip Cookies, original recipe's here. www.dailygarnish.com.

So I went ahead and made them un-vegan using her recipe. They were very easy to make, and all ingredients I had one hand.

Makes about 2 dozen cookies.

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp  salt
  • 1/2 cup Butter, I used I Can't Believe Its Not Butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar, loosely packed
  • 1 medium ripe banana
  • 1 tsp vanilla
  • 2 tbsp skim milk
  • 1/2 cup chocolate chips
  •  1/4 cup white chips

  • Mix dry ingredients and set aside.

    Mix Butter and sugar until creamed together. Then add milk, vanilla, and banana. Slowly add dry ingredients until mixed, stir in chocolate chips. Scoop onto baking sheet, press down a little bit.

    Bake at 350* for about 10minutes or depending on your oven.

    Let cook completely and enjoy.

    Breakfast Cookies

    My manager found this recipe & shared, said they were really good!!

    What you need:

    2 cups Total cereal, crushed
    ¾ cup whole wheat flour
    ½ tsp baking soda
    ½ tsp salt
    1 tsp cinnamon

    1 egg
    ½ cup brown sugar
    ¼ c. canola oil (I had walnut flavored olive oil and used that and it turned out great).
    2 tsp vanilla
    ¾ cup low fat ricotta cheese



    In one bowl, stir together dry ingredients.

    In separate bowl, mix the wet ingredients and the brown sugar. Mix wet into dry just until blended.

    Drop by tablespoonfuls onto cookie sheet lined with parchment paper (I used my Silpat mat).

    Flatten a bit with a fork (it’s a little tough as it’s kind of gloppy – not quite like regular cookie dough).

    Sprinkle the tops with cinnamon/sugar. Bake at 400 degrees approximately 15-17 minutes until browned.



    **She added raisins to half the batch, Im going to add some dried cranberrys to half as well.
