S’mores Cookie Bars

S’mores Cookie Bars

1/2 cup butter, room temperature
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp vanilla extract
1 1/3 cups all purpose flour
3/4 cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
2 king-sized milk chocolate bars (e.g. Hershey’s)
1 1/2 cups marshmallow creme/fluff (not melted marshmallows)

Preheat oven to 350°F. Grease an 8-inch square baking pan. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt.

Add to butter mixture and mix at a low speed until combined. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick.

Spread chocolate with marshmallow creme or fluff. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small shingles and laying them together).  

Bake for 30 to 35 minutes, until lightly browned.

Cool completely before cutting into bars.

Monster Bars

Ingredients

1/2cup butter
1 cup white sugar
1 cup brown sugar
1 1/2cup peanutbutter
1 tsp vanilla
2 tsp baking soda
4 1/2cup oatmeal
2 cup chocolate chips
2 cup m&ms

How to make it


  • Preheat oven to 350º F.
  • Cream the butter and sugars together.
  • Add eggs and peanut butter and mix.
  • Stir in vanilla, baking soda and oatmeal.
  • Stir in chocolate chips and M & M’s.
  • Put in an ungreased jellyroll pan.
  • Bake for 15 minutes. Do not over bake.

    7 layer bars

    Ingredients
    • 1 1/2 cups graham cracker crumbs
    • 1/2 cup butter or margarine, melted
    • 1 (14 ounce) can fat free Sweetened Condensed Milk
    • 1 cup semi-sweet chocolate chips
    • 1 cup butterscotch-flavored chips
    • 1 1/3 cups flaked coconut
    • 1 cup chopped nuts ( I used walnuts)

    Directions

    1. Preheat oven to 350 degrees F (325 degrees F for glass baking pan). 
    2. In small bowl, combine graham cracker crumbs and butter; mix well. Press crumb mixture firmly on bottom of 13x9-inch baking pan. ( or pour melted butter in pan & sprinkle crumb mixture on, it soaks it up.)
    1. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with remaining ingredients; press down firmly with fork. ( OR you can put all your layers on and pour condensed milk over everything at the end, which I did.)
    2. Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars or diamonds. Store covered at room temperature.
    3. Makes 24 pieces.

      Chocolate Chip Cream Cheese Bars

      What you need:

      2 pkgs refrigerated chocolate chip cookie dough
      2 pkgs cream cheese ( I used low fat)
      1 cup sugar
      2 eggs (I'm using eggbeaters)
      1 tsp vanilla


      Heat oven to 350, grease 13x9 baking dish, slice first cookie package into 1/4inch slices, cover bottom of pan. Pat carefully into open spaces

      Cream together cream cheese, sugar, eggs and vanilla. Spread evenly over bottom layer.

      Slice 2nd package into 1/4inch slices and cover cream cheese layer.

      Gently spread edges of top layer to fill open spaces.

      Bake for 40minutes, under cooked is better....

      Raisin Oatmeal Bites

      I found this recipe on the new Weight Watchers points plus, 2 points per cookie.

      Ingredients:


      1 1/2 cup(s) rolled oats

      3/4 cup(s) whole-grain wheat flour

      1/2 tsp baking powder

      1/4 tsp table salt

      1/2 tsp ground cinnamon

      1/2 cup(s) regular butter, softened  ( I used I cant believe its not butter)

      1/2 cup(s) packed brown sugar

      1/4 cup(s) sugar

      1 large egg(s)

      1 tsp vanilla extract

      1 cup(s) raisins, chopped



      Instructions

      Preheat oven to 350ºF

      In a medium bowl, combine oats, flour, baking powder, salt and cinnamon; set aside. Using an electric mixer, cream butter and both sugars until incorporated. Add egg and vanilla; mix thoroughly. Add oat mixture and mix until just combined; fold in raisins.

      Drop rounded teaspoons of batter onto 2 ungreased cookie sheets, about 1-inch apart each. Bake for 9 to 10 minutes for chewy cookies or 11 to 12 minutes for crispy cookies. Remove from oven and let cookies rest on cookie sheets for about 2 minutes; remove cookies to a wire rack to cool completely.

      Yields 1 cookie per serving.

      Peanut Butter Oatmeal Chocolate Chip Cookies

      Peanut Butter Oatmeal Cookies

      •1/2 cup all-purpose flour

      •3/4 cup white whole wheat flour

      •1 cup quick cooking rolled oats

      •1/2 tsp. baking soda

      •1/2 tsp. salt

      •3/4 cup light brown sugar

      •1/3 cup butter

      •1/3 cup creamy peanut butter

      •1/4 cup nonfat buttermilk

      •1/3 cup dark chocolate chips or semisweet chocolate chips

      Preheat oven to 350 degrees. Spray a cookie sheet with nonstick spray. Whisk together first five ingredients (through salt) in a medium mixing bowl. In a large mixing bowl, beat sugar, butter, peanut butter and buttermilk together. Stir in flour mixture until a soft dough forms. Add chocolate chips

      Roll dough into walnut-shaped balls and place on prepared cookie sheets, 2 inches apart. Flatten gently with the back of a fork. Bake 10-12 minutes. Store cookies in an airtight container with a piece of white bread. The white bread keeps the cookies soft.

      Makes 30 cookies. ( I got 40)

      Chocolate, Cranberry & Oat Bars

      I found this recipe in the Kraft food magazine 2007

      What you need:

      1 cup dried cranberries
      1/4 cup orange juice
      1 1/2 cups flour ( I used whole wheat)
      1 1/2 cups quick cooking oats
      1 tsp baking powder
      1/4 tsp salt
      3/4cup softened margarine ( I used butter)
      1 1/2cups brown sugar firmly packed
      2 eggs ( I used egg beaters)
      4 squares Bakers Semi Sweet Baking Chocolate, coarsely chopped
      1/2cup pecan pieces ( I didn't use)


      Preheat oven to 350. Combine cranberries & orange juice in bowl and microwave on High for 30seconds. Let stand 10 minutes.

      Combine flour, oats, baking powder and salt, set aside

      Beat margarine(butter) in bowl with brown sugar until fluffy. Add eggs, 1 at a time, beating until well blended. Gradually add flour mixture, mixing well after each addition. Stir in cranberry mixture and chocolate.

      Spread dough in 13x9 baking dish sprayed with cooking spray.

      Bake 20-22minutes until center is set. Cool completely on wire rack before cutting to serve.

      Makes 32 pieces.
